Tuna
The first Tuna dish inspired by Shinya Tasaki's
battle with Iron Chef Masahiko Kobe
Tuna Steak Tartare with Crystal ’90 champagne
Chef Tasaki cut the top off of a bottle of champagne and
poured it into a pan, then he added water and salt to make a
marinade. He salt cured cucumber bits in a sauce of Sendai
miso. He soaked tuna in the marinade and then smoked it
over cherry and apple wood chips on a screen over a wok.
He minced the smoked tuna before serving.
Wooden Chef Recipe: Tuna Dip with Sauces
No problem, quick and simple. Drain and dump a 6 oz. can of albacore tuna in a bowl.
If you want to have the tuna keep its round shape, run a butter knife around the inside
of the can before you dump the tuna out. Serve with tortilla chips, wasabi sauce, and
Chinese mustard. OK, the kids won’t eat wasabi, give them salad mustard and green
ketchup. Wash it down with your favorite beer. The kids get their favorite pop.
