Battle Sushi – Keiji Nakazawa vs. Masaharu Morimoto

Cooking Style: Neo Japanese vs Traditional Japanese
Edo is the ancient name for Tokyo. Edo style sushi is very
different from what we Americans think of as sushi.
Instead of the tightly rolled, bite size bits of seaweed ( nori )
wrapped rice, Edo style has the ingredients stacked in layers.
Also, it is cooked instead of raw, maybe because the style was
invented before the days of refrigeration when meat didn't keep.
I cooked along with this battle and came up with five dishes.
I made little drawings, about one inch square, along the margins
of my notes. I finally decided to use the little pictures any way
because I wanted to show my five interesting "sushi" dishes.
