Pacific Saury
The second saury dish inspired by Iron Chef Hiroyuki Sakai's
battle with Challenger Kazumi Nagayama
Saury Carpaccio with Persimmon Sauce
Chef Sakai mixed sesame seed and udo with kidney
beans and peanut butter. He blended a sauce made
from dried persimmons, wine, consommé, and soy
sauce. Foie gras was put on top of the fish and the
kidney bean and peanut butter mixture was put on
top of the foie gras. The persimmon sauce was spread
around the fish on the plate.
Whiting and Rice with Apricot Sauce
About all I had time to do was find out what persimmon is; a fruit
similar to apricot. Well heck, I just happened to have a can of apricots
stuck back in the pantry. I took two apricots, or four halves, and
tossed them into the blender. I put a piece of whiting on some rice,
put a lemon slice and cilantro on top, and spooned on my apricot
sauce. I completely missed the kidney beans and peanut butter.
This dish actually tasted great though, with the lemon and cilantro.
