Pacific Saury
The first saury dish inspired by Iron Chef Hiroyuki Sakai's
battle with Challenger Kazumi Nagayama
Smoked Saury on Crepe
I think that Iron Chef Sakai marinated the fish in vinegar
and sugar, then smoked it over apple wood chips.
He made a crepe out of buckwheat flour to serve the
fish on. He also made a sauce out of saury innards and
a soup made from cucumber and saury to accompany
the dish. I think he garnished it with caviar, broccoli and
green onion.
Grilled Whiting on Tortilla
Wooden Chef made a Mexican style version, using whiting, cilantro, green
onion, lemon, and purple ketchup. The fish and vegetables were then chopped
up, the lemon was squeezed on the mixture, and the ketchup was spread along
the edge to hold the tortilla together when rolled up.
A sauce made of mayonnaise and minced onion was added.
