 Pacific Saury

 

 The fifth saury dish inspired by Kazumi Nagayama's

 battle with Iron Chef Hiroyuki Sakai

                                         

                   Stewed Tomatoes and Saury

 

                  First Chef Nagayama filleted a whole saury. He wrapped

                 celery in saury and tied the roll up, then he covered the

         roll with corn starch and fried it. I think he made a

             tomato sauce using tomato puree, curry powder, and

           ketchup. He then covered the rolled up fish with the

             sauce, skewered the roll and smoked it. Celery helps

to suppress the fishy smell.                            

 

 

Microwaved Tomatoes and Whiting

 

2 whiting squares  ( about two ounces )

3 Roma tomatoes ( about 4 ounces )      

½ oz. chopped celery                              

1 green onion ( ½ ounce )                      

1 purple onion ring                                

1 lemon slice                                         

 

The rice was already cooked in preparation for the battle, I covered

a plate with some and microwaved it one minute before plating.

 I sliced up the three tomatoes, celery, and the white part of the

green onion, and pan fried along with the whiting, then put these

ingredients on top of the rice. Then I garnished with the purple onion

ring, lemon slice, and green onion. I microwaved the dish for one

minute. My notes say that I had already cooked the purple onion ring,

that may have been a mistake because the garnish came out looking

overcooked. Probably thirty to forty-five seconds would be enough

time to heat the dish.
