 Pacific Saury

 

 The third saury dish inspired by Kazumi Nagayama's

 battle with Iron Chef Hiroyuki Sakai

                                         

                    Grilled Saury on Ice

 

                  I don't think they showed this dish being prepared,

                but it may have been one he cooked with a torch.

                     They mentioned a sauce of citrus juice and soy sauce

                with a touch of celery. It looked a lot like a can of

sardines to me.                                      

 

 

                                                                       Grilled Whiting on Rice

 

Put the fish and rice in a very small bowl or cup and cover with

 lemon juice, microwave for one minute. Remove the fish from the

bowl, strain the rice out with a fork and put the rice on the plate.

Add soy sauce to the remaining lemon juice to make the sauce.

Put the fish on top of the rice and add a lemon slice and cilantro

for garnish. The lemon flavor is subdued by the fish and rice.
