                   The second lobster dish inspired by Tadaaki Shimizu's

                                             Wooden Chef's Version: Faux Lobster Salad

                             This was a cook-along, so all of the matching dishes were thrown together,

                             but a good salad isn't hard to make. I used some organic baby mixed greens

                             as a base, sliced some roma tomatoes for the second layer, then put three

                             pieces of Louis Kemp® steam baked Lobster Delights on top of the roma

                             slices. I added some Rotel® Mexican Festival diced tomatoes with lime

                             juice and cilantro. The Piece de Resistance was the Jumex® Mango Nectar

                             used as a dressing. The wide range of flavors blended together very well.
