Main Ingredient: Jinhua Pork
Cooking Style: Japanese and French
 

Challenger Shuzo Shimokawa

1. Jinhua Pork Teriyaki

Mixed in blender:
Chenpi (orange peel) dried citrus peel used as a spice in Chinese cooking, vinegar, and honey.
Rubbed on the pork.
Recoated pork with orange glaze
 

2. Qian Long Di's Soup

Boiled winter melons in nets in big pot.
Pressure cooked pork belly, ginger, soy sauce, shallots, cinnamon, star anise, rock sugar, and Shan Tan soup stock
Poured Ding Tang into winter mellon
covered with paper, put in steamer
 
 

 

3. Jinhua Pork in Crepe

Crepes cooked in wok with diced pork seasoned with cornstarch, salt and pepper, fried eggs, oyster sauce, Chinese soy sauce, Chinese rice wine, Shan tan soup stock, peppercorns
Crispy fried pork and shallots inside crepe.
Rolled over pork and shallots and folded up.
 
 

 

4. Braised Jinhua Pork

Minced leg pork, pepper, water and ginger,
scallions, and corn starch stuffed into Kinshua (tubular) mushrooms.


 
 

 

5. Warm Lettuce Salad

Pushed Ham (bacon) into slots cut into the lettuce quarters.
Served with raspberries and Mandarin orange sections.
 
 

Iron Chef Hiroyuki Sakai

1. Prawns Wrapped in Pork Filet

Prawns and vegetables wrapped in a pork filet then wrapped in pork fat net the ends only were wrapped in tin foil to keep the ends of the roll from burning, then the roll was tied with string
Cut into one inch thick slices and served with green onions on a red sauce.
 
 

 

2. Braised Ribs and Trotters

Flaming stir-fry pieces (feet) (flambe) put pieces into pressure cooker, have vegatatbles cooking
meantime, tied "trotters" with string and added white wine.
Out of pressure cooked, put pig "trotters" and boiled pork belly on strainer, flavored with
South African tea, veal stock, various mushrooms, and Jinhua ham.
Put onto rice and mushrooms, formed into a small circle.
 
 

 

3. French Style Wonton Soup

White celery, ordinary white mushrooms, and pork
Soup is flavored with Jinhua pork.
 
 

 

4. Roast and Smoked Jinhua Pork

Smoking pork in wok with wood chips on top of aluminum foil
put a screen over the wok
coat braised pork with mustard
smoke on wok with green onions
 
 

 

5. Pork and Pineapple Roast

Prunes and a big pork piece were put into a pan and covered with pineapple sauce.
Mixed soy sauce, cooking saki, and regular saki in a bowl and splashed it over the pineapple dish.

6. Jasmin Tea Sorbet

Vodka, jasmine tea, sugar and pepper was put into the ice cream machine.
