                                                         Duck

        Recipes inspired by the battle between Iron Chef Hiroyuki Sakai 

        and Challenger Mitsuo Hazama shown September 7th, 2001

       

 

 This was a traditional Wooden Chef cook along. I made four dishes.

 

                    I went to the store and bought some CHICKEN. It was on sale at a discount, use it now or

                   freeze, etc. I also had a can of chicken from the Mediterranean market (in a can, like Spam).

                   I know I had a can of the good stuff - SwansonŽ , but I think some kid ate it right out of the

                   can. I didn't see anything that they made with duck that couldn't be done just as well with
                   chicken.
                     
                    I had the privilege of having dinner with Joe and Blanca Sanchez back in the early 1970's
                    in Houston, Texas. Mrs. Sanchez made the best duck that I have ever had. First she boiled
                    the whole duck in a big pot to remove the grease and fat. After the water boiled, she let
                    it simmer while she spooned off the grease. This process was much too time consuming
                    for an Iron Chef Battle. I noticed that neither chef cooked a whole duck. When the grease
                    was gone, Mrs. Sanchez removed the duck and stuffed it with a mixture of corn meal,
                    corn, cilantro, chopped onion, and deseeded minced red jalapeno. She then baked the
                    duck in the oven, basting it with butter. The finished duck was like a Thanksgiving turkey.
