I'm opening the Burger King by myself each morning. That means I have to get up at 3:00 a.m.

in order to get there by 5:00 a.m. (I'm usually early). The first thing I do is make three pots of coffee. Some people will show up at 5 while I still have my coat on. I have to wear my coat to go into the freezer that is kept at 15 degrees. I have to haul all of the boxes of eggs, sausage, hash browns, french toast sticks, biscuits, cini-minis, bacon, and ham out and cook everything for breakfast.

Cooking Style: Szechwan Chinese vs. Japanese 

Iron Chef: Chen Kenichi   Challenger: Kentaro

The first show I was able to see since moving and having to get up at 3:00 a.m.

The challenger was a young upstart food critic, the son of a woman chef who had beaten Chen.

Chen made potato butterflies and flowers soaked in wine, and beat the kid easily.

At McDonald's the cases of frozen fries say SALT THE FRIES  in big letters on all six sides of the box. They are supposed to be liberally salted in an "M" pattern. At Burger King, you have  a choice of fries or onion rings. My sous chefs were surprised that I kept insisting that they put salt on the French fries.
 Then Corporate BK issued the edict "salt the fries in an "M" pattern". I replied, gee guys, shouldn't you make that a "W"  pattern (for Whopper) so it isn't a direct copy of Big M's manual ?

 

Thursday, December 20th, 2001

I finally updated the website again. It's been more than a month

Finally things are getting settled and we are preparing to do Battle Homard

tomorrow night. I've missed most of the shows since the middle of November

and missed Iron Chef USA on November 16th, but I've talked to Bill Collins,

Iron Chef Tennessee, and sometime soon we'll get together and watch it.

Main Ingredient: Homard (a true Lobster having two claws, as opposed to rock or spiny lobster which

are really large members of the crawfish family. Mainly an ingredient in expensive French cuisine.)

I think Chen made a kind of mozzarella by warming the milk up to about 90 F. and adding vinegar to get the curd to coagulate. He may have used rice vinegar because I think it is milder than cider vinegar. I've seen this done on an Italian cooking show, I think it was Molto Mario.
